Ingredients
- 6 cups of sliced peaches

Instructions
- Preheat the oven to 375°F (190°C). Grease a 9x9 inch baking dish.
- In a large bowl, combine 6 cups of sliced peaches, 1/2 cup of granulated sugar, 1 tablespoon of lemon juice, and 1 teaspoon of vanilla extract. Toss to coat the peaches evenly and transfer to the prepared baking dish.
- In another bowl, mix 1 cup of all-purpose flour, 1/2 cup of rolled oats, 1/2 cup of brown sugar, 1/2 teaspoon of cinnamon, and 1/4 teaspoon of salt. Add 1/2 cup of cold, unsalted butter pieces and use your fingers to mix until the mixture resembles coarse crumbs.
- Sprinkle the crumble mixture evenly over the peaches in the baking dish.
