Ingredients
- 6 cups of sliced peaches
- 1 cup of granulated sugar
- 1/4 cup of brown sugar
- 1 teaspoon of ground cinnamon
- 1/4 teaspoon of ground nutmeg

- 1 cup of all-purpose flour
- 1 teaspoon of baking powder
- 1/2 teaspoon of salt
- 1/2 cup of unsalted butter
- 1/4 cup of boiling water
- 3/4 cup of heavy cream
- 2 tablespoons of powdered sugar
- 1/2 teaspoon of vanilla extract
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine 1 cup of granulated sugar, 1/4 cup of brown sugar, 1 teaspoon of ground cinnamon, 1/4 teaspoon of ground nutmeg, and 1 tablespoon of lemon juice. Add the sliced peaches and toss to coat. Transfer the peach mixture to a 9x13 inch baking dish.
- In a separate bowl, mix 1 cup of flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt. Cut in the butter until the mixture resembles coarse crumbs. Sprinkle the mixture over the peaches. Pour 1/4 cup of boiling water over the topping.
- Bake in the preheated oven for 45 minutes, or until the topping is golden brown.
- While the cobbler is baking, make the whipped cream. In a chilled bowl, whip 3/4 cup of heavy cream with 2 tablespoons of powdered sugar and 1/2 teaspoon of vanilla extract until stiff peaks form.
