  • 1 lb ground beef
  • 8 slices of rye bread
  • 8 slices of Swiss cheese
  • 1 large onion, thinly sliced
  • 4 tbsp of butter
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 2 chipotle peppers in adobo sauce, minced
  • 1 clove of garlic, minced
  • 1 tbsp of lime juice

Instructions

  • In a bowl, mix together 1/2 cup mayonnaise, 2 minced chipotle peppers, 1 minced clove of garlic, and 1 tbsp of lime juice to make the spicy chipotle aioli. Set aside.
  • Divide the ground beef into 4 equal portions and shape them into patties. Season with salt and pepper.
  • Heat a skillet over medium-high heat and cook the patties for 3-4 minutes on each side, or until they reach your desired level of doneness. Remove from the skillet and set aside.
  • In the same skillet, melt 2 tbsp of butter and add the sliced onions. Cook for 5-7 minutes, or until the onions are caramelized. Remove from the skillet and set aside.
  • Spread the remaining 2 tbsp of butter on one side of each slice of rye bread. Place 4 slices butter-side down in the skillet and top each with a slice of Swiss cheese, a cooked patty, caramelized onions, a dollop of spicy chipotle aioli, and another slice of Swiss cheese. Top with the remaining bread slices, butter-side up.
  • Cook the sandwiches for 2-3 minutes on each side, or until the bread is golden brown and the cheese is melted.
  • Slice the sandwiches in half and serve hot. Enjoy your spicy chipotle patty melt!
