- Divide the dough in half and shape each half into a 1 1/2-inch diameter log. Wrap the logs in plastic wrap and refrigerate for at least 1 hour, or until firm.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Remove the dough from the refrigerator and slice each log into 1/4-inch thick rounds. Place the rounds on the prepared baking sheet, spacing them about 1 inch apart.
- Bake the cookies for 10-12 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
