No-Bake Strawberry Lemon Icebox Cake

Ingredients
- 2 pounds fresh strawberries, sliced
- 1/2 cup granulated sugar
- 1 teaspoon lemon zest
- 1 (3.4 oz) package instant lemon pudding mix
- 2 cups cold milk
- 1 (8 oz) package cream cheese, softened
- 1 (8 oz) container frozen whipped topping, thawed
- Graham crackers
Instructions
- In a large bowl, toss 2 pounds of sliced strawberries with 1/4 cup of granulated sugar and lemon zest. Set aside.
- In another bowl, whisk together the instant lemon pudding mix and 2 cups of cold milk until thickened. In a separate bowl, beat the softened cream cheese and 1/4 cup of granulated sugar until smooth. Fold in the whipped topping until well combined.
- Spread a small amount of the cream cheese mixture in the bottom of a 9x13 inch dish. Arrange a single layer of graham crackers over the cream cheese mixture, breaking them to fit if necessary. Spread half of the lemon pudding over the graham crackers, then top with half of the strawberry mixture. Repeat layers with remaining ingredients, ending with a final layer of the cream cheese mixture on top.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to allow the graham crackers to soften and the flavors to meld.
- Before serving, garnish with additional sliced strawberries and a sprinkle of lemon zest if desired. Slice and enjoy!
