Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup sliced mushrooms
- 1 cup shredded Swiss cheese
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix together 1/4 cup breadcrumbs, 1/4 cup grated Parmesan cheese, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder, 1/4 teaspoon salt, and 1/4 teaspoon black pepper.
- Pound the chicken breasts to an even thickness. Sprinkle each chicken breast with salt and pepper.
- Divide the sliced mushrooms and shredded Swiss cheese evenly among the chicken breasts, placing them in the center of each breast.
- Roll up the chicken breasts, tucking in the sides, and secure with toothpicks.
- Brush the outside of each chicken breast with 2 tablespoons of olive oil, then roll in the breadcrumb mixture to coat.
- Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Remove the toothpicks before serving. Enjoy!
