Instructions

  • In a small bowl, mix together 1/4 cup breadcrumbs, 1/4 cup grated Parmesan cheese, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder, 1/4 teaspoon salt, and 1/4 teaspoon black pepper.
  • Pound the chicken breasts to an even thickness. Sprinkle each chicken breast with salt and pepper.
  • Divide the sliced mushrooms and shredded Swiss cheese evenly among the chicken breasts, placing them in the center of each breast.
  • Roll up the chicken breasts, tucking in the sides, and secure with toothpicks.
  • Brush the outside of each chicken breast with 2 tablespoons of olive oil, then roll in the breadcrumb mixture to coat.
  • Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
