Instructions

  • In a heatproof bowl, whisk together 4 egg yolks and 1/2 cup of sugar until well combined.
  • Place the bowl over a pot of simmering water, making sure the bottom of the bowl does not touch the water. Whisk constantly until the mixture thickens, about 5 minutes.
  • Remove the bowl from the heat and whisk in 1 cup of mascarpone cheese until smooth. Set aside to cool.
  • In a separate bowl, whip 1 1/2 cups of heavy cream and 1 teaspoon of vanilla extract until stiff peaks form.
  • Gently fold the whipped cream into the mascarpone mixture until fully combined. Set aside.
  • In a small bowl, whisk 1 tablespoon of matcha powder with 1/2 cup of hot water until smooth. Set aside to cool.
  • Dip each ladyfinger cookie into the matcha mixture, ensuring they are fully coated but not soggy. Arrange a layer of dipped cookies in the bottom of a 9x9 inch dish.
  • Spread half of the mascarpone mixture over the layer of cookies. Repeat with another layer of dipped cookies and the remaining mascarpone mixture.
  • Cover and refrigerate the tiramisu for at least 4 hours, or overnight, to allow the flavors to meld.
  • Before serving, dust the top of the tiramisu with 1/4 cup of unsweetened cocoa powder using a fine mesh sieve.
  • Slice and serve the matcha tiramisu chilled. Enjoy!
