  • In a large bowl, beat 24 oz softened cream cheese until smooth. Gradually add 1 cup maple syrup, mixing until well combined. Add 3 eggs, one at a time, mixing well after each addition. Stir in 1 tsp vanilla extract and 1/2 cup chopped walnuts.
  • Pour the cream cheese mixture over the crust in the pan. Smooth the top with a spatula.
  • Bake in the preheated oven for 55-60 minutes, or until the center is almost set. Remove from the oven and run a knife around the edges of the pan to loosen the cheesecake. Allow to cool completely on a wire rack, then refrigerate for at least 4 hours or overnight before serving.
