- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup maple syrup
- 3 eggs
- 1 tsp vanilla extract
- 1/2 cup chopped walnuts
Instructions
- Preheat the oven to 325°F. Grease a 9-inch springform pan.
- In a medium bowl, mix together 1 1/2 cups graham cracker crumbs, 1/4 cup granulated sugar, and 1/2 cup melted unsalted butter. Press the mixture into the bottom of the prepared pan.
- In a large bowl, beat 24 oz softened cream cheese until smooth. Gradually add 1 cup maple syrup, mixing until well combined. Add 3 eggs, one at a time, mixing well after each addition. Stir in 1 tsp vanilla extract and 1/2 cup chopped walnuts.
- Pour the cream cheese mixture over the crust in the pan. Smooth the top with a spatula.
- Bake in the preheated oven for 55-60 minutes, or until the center is almost set. Remove from the oven and run a knife around the edges of the pan to loosen the cheesecake. Allow to cool completely on a wire rack, then refrigerate for at least 4 hours or overnight before serving.
