Ingredients
- 2 acorn squash, halved and seeded
- 1/4 cup maple syrup
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Preheat the oven to 400 degrees F (200 degrees C).
- In a small bowl, mix 1/4 cup of maple syrup, 2 tablespoons of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Brush the cut sides of the acorn squash with the maple syrup mixture.
