Instructions

  • Preheat the oven to 400 degrees F (200 degrees C).
  • In a small bowl, mix 1/4 cup of maple syrup, 2 tablespoons of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Brush the cut sides of the acorn squash with the maple syrup mixture.
  • Place the squash cut-side down on a baking sheet lined with parchment paper.
  • Roast in the preheated oven for 30 minutes.
  • Carefully flip the squash over and brush the tops with the remaining maple syrup mixture.
  • Roast for an additional 10 minutes, or until the squash is tender and caramelized.
  • Sprinkle with chopped fresh parsley, if desired, and serve hot.
