Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup maple syrup
- 3 eggs
- 1 tsp vanilla extract
- 1 cup chopped pecans
- 1/2 cup semisweet chocolate chips
Instructions
- Preheat the oven to 325°F. Grease a 9-inch springform pan.
- In a medium bowl, mix together 1 1/2 cups of graham cracker crumbs, 1/4 cup of granulated sugar, and 1/2 cup of melted unsalted butter. Press the mixture into the bottom of the prepared springform pan.
- In a large bowl, beat 24 oz of softened cream cheese until smooth. Gradually add 1 cup of maple syrup, mixing until well combined. Beat in 3 eggs, one at a time, then stir in 1 teaspoon of vanilla extract. Fold in 1 cup of chopped pecans. Pour the filling over the crust in the springform pan.
- Bake in the preheated oven for 55-60 minutes, or until the center is almost set. Allow the cheesecake to cool in the oven with the door ajar for 1 hour. Then refrigerate for at least 4 hours, or overnight.
- Once the cheesecake is chilled, melt 1/2 cup of semisweet chocolate chips in the microwave in 30-second intervals, stirring in between, until smooth. Drizzle the melted chocolate over the top of the cheesecake.
- Slice and serve the maple pecan cheesecake with chocolate drizzle. Enjoy!
