Instructions

  • Place the pork chops in a shallow dish and pour the maple syrup mixture over them. Let them marinate for 10 minutes.
  • While the pork chops are marinating, toss the cubed sweet potatoes with 2 tablespoons of olive oil, 1 teaspoon of paprika, 1/2 teaspoon of garlic powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Spread them out on a baking sheet in a single layer.
  • Place the marinated pork chops on a separate baking sheet lined with parchment paper. Bake the pork chops and sweet potatoes in the preheated oven for 25-30 minutes, or until the pork chops reach an internal temperature of 145°F (63°C) and the sweet potatoes are tender and golden brown.
  • While the pork chops and sweet potatoes are baking, transfer the remaining marinade to a small saucepan. Bring it to a boil over medium heat, then reduce the heat and simmer for 5-7 minutes, or until the glaze thickens slightly.
