Mango Salsa Salmon Burger with Avocado Slices

Ingredients
- 1 lb salmon fillet, skin removed
- 1/2 cup bread crumbs
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 egg
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 ripe mango, diced
- 1/4 cup red bell pepper, diced
- 1/4 cup red onion, diced
- 1 jalapeno, seeded and minced
- 2 tbsp lime juice
- 1 avocado, sliced
- 4 burger buns
- Lettuce leaves
Instructions
- In a food processor, pulse the salmon fillet until finely chopped.
- In a large bowl, combine the chopped salmon, bread crumbs, red onion, cilantro, egg, cumin, paprika, salt, and black pepper. Mix until well combined.
- Form the salmon mixture into 4 patties and place them on a plate. Refrigerate for 10 minutes to firm up.
- In a separate bowl, mix together the diced mango, red bell pepper, red onion, jalapeno, and lime juice to make the mango salsa. Set aside.
- Preheat a grill or grill pan over medium-high heat. Grill the salmon patties for 4-5 minutes on each side, or until cooked through.
- Toast the burger buns on the grill for 1-2 minutes.
- To assemble the burgers, place a salmon patty on the bottom half of each bun. Top with a generous spoonful of mango salsa, a few avocado slices, and lettuce leaves. Place the top half of the bun on top.
- Serve the mango salsa salmon burgers with avocado slices immediately and enjoy!
