  • 1 egg
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 ripe mango, diced
  • 1/4 cup red bell pepper, diced
  • 1/4 cup red onion, diced
  • 1 jalapeno, seeded and minced
  • 2 tbsp lime juice
  • 1 avocado, sliced
  • 4 burger buns
  • Lettuce leaves

  • 1 jalapeno, seeded and minced
  • 2 tbsp lime juice
  • 1 avocado, sliced
  • 4 burger buns
  • Lettuce leaves

Instructions

  • In a food processor, pulse the salmon fillet until finely chopped.
  • In a large bowl, combine the chopped salmon, bread crumbs, red onion, cilantro, egg, cumin, paprika, salt, and black pepper. Mix until well combined.
  • Form the salmon mixture into 4 patties and place them on a plate. Refrigerate for 10 minutes to firm up.
  • In a separate bowl, mix together the diced mango, red bell pepper, red onion, jalapeno, and lime juice to make the mango salsa. Set aside.
  • Preheat a grill or grill pan over medium-high heat. Grill the salmon patties for 4-5 minutes on each side, or until cooked through.
  • Toast the burger buns on the grill for 1-2 minutes.
  • To assemble the burgers, place a salmon patty on the bottom half of each bun. Top with a generous spoonful of mango salsa, a few avocado slices, and lettuce leaves. Place the top half of the bun on top.
  • Serve the mango salsa salmon burgers with avocado slices immediately and enjoy!
