Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1/2 cup fresh key lime juice
- 1 tablespoon key lime zest
- 1 can (14 ounces) sweetened condensed milk
- 2 ripe mangoes, peeled and diced
- 1/4 cup powdered sugar
- 1 cup heavy cream
- 1/4 teaspoon vanilla extract
Instructions
- Preheat the oven to 350 degrees F.
- In a medium bowl, mix together 1 1/2 cups graham cracker crumbs, 1/4 cup granulated sugar, and 1/2 cup melted unsalted butter. Press the mixture into the bottom and up the sides of a 9-inch tart pan. Bake for 10 minutes, then let it cool completely.
- In another bowl, whisk together 1/2 cup fresh key lime juice, 1 tablespoon key lime zest, and 1 can of sweetened condensed milk until smooth. Pour the mixture into the cooled crust and refrigerate for at least 1 hour.
- In a blender or food processor, puree 1 1/2 diced mangoes until smooth. In a separate bowl, whip 1 cup heavy cream with 1/4 cup powdered sugar and 1/4 teaspoon vanilla extract until stiff peaks form. Gently fold the mango puree into the whipped cream.
- Spread the mango cream over the chilled key lime filling. Decorate with the remaining diced mangoes. Refrigerate for another 2 hours before serving. Enjoy!
