Ingredients
- 2 cups cooked and shredded chicken breast
- 2 ripe mangoes, peeled and diced
- 1 ripe avocado, sliced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup mayonnaise
- 2 tablespoons lime juice
- 1 teaspoon honey
- Salt and pepper to taste
- 4 large whole wheat tortillas
Instructions
- In a large bowl, combine the shredded chicken, diced mangoes, sliced avocado, red onion, and cilantro.
- In a small bowl, whisk together the mayonnaise, lime juice, honey, salt, and pepper.
- Pour the dressing over the chicken and mango mixture, and toss until everything is well coated.
- Lay out the tortillas and divide the chicken and mango mixture evenly among them, spreading it out in the center of each tortilla.
- Roll up the tortillas, tucking in the sides as you go, to form wraps.
- If desired, heat a large skillet over medium heat and lightly toast the wraps for 1-2 minutes on each side until golden brown and crispy.
- Slice the wraps in half and serve immediately. Enjoy!
