Instructions

  • Preheat the oven to 400°F (200°C).
  • In a small bowl, whisk together the olive oil, minced garlic, lemon juice, and lemon zest. Season with salt and pepper.
  • Place the salmon fillets on a baking sheet lined with parchment paper. Brush the lemon garlic mixture over the salmon.
  • Bake the salmon in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
  • While the salmon is baking, prepare the couscous. In a medium saucepan, bring the broth to a boil. Stir in the couscous, cover the pan, and remove it from the heat. Let it sit for 5 minutes, then fluff with a fork.
