Ingredients
- 4 salmon fillets (6 oz each)
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 2 lemons, juiced and zested
- 1/4 cup fresh parsley, chopped
- 1 cup couscous
- 2 cups chicken or vegetable broth
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together the olive oil, minced garlic, lemon juice, and lemon zest. Season with salt and pepper.
- Place the salmon fillets on a baking sheet lined with parchment paper. Brush the lemon garlic mixture over the salmon.
- Bake the salmon in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
- While the salmon is baking, prepare the couscous. In a medium saucepan, bring the broth to a boil. Stir in the couscous, cover the pan, and remove it from the heat. Let it sit for 5 minutes, then fluff with a fork.
- Stir the chopped parsley into the cooked couscous and season with salt and pepper to taste.
- Serve the lemon garlic salmon over a bed of parsley couscous. Enjoy!
