Instructions

  • In a small bowl, combine the olive oil, minced garlic, thyme leaves, lemon juice, lemon zest, salt, and black pepper.
  • Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Let it marinate in the refrigerator for at least 30 minutes.
  • Preheat the grill or grill pan over medium-high heat. Remove the chicken from the marinade and discard the excess marinade.
  • Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
  • Remove the chicken from the grill and let it rest for 5 minutes before serving.
