Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/4 cup ice water
- 1/2 cup lavender-infused honey
- 3 large eggs
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
Instructions
- In a food processor, combine 1 1/2 cups of flour, 1/4 cup of sugar, and 1/4 teaspoon of salt. Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs.
- While pulsing, drizzle in the ice water until the dough comes together. Be careful not to overmix. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface and transfer it to a 9-inch pie dish. Trim any excess dough and crimp the edges. Prick the bottom of the crust with a fork and line with parchment paper. Fill with pie weights or dried beans and bake for 15 minutes. Remove the weights and parchment paper, then bake for an additional 5 minutes. Set aside to cool.
- In a medium bowl, whisk together 1/2 cup of lavender-infused honey, 3 large eggs, 1/2 cup of heavy cream, 1 teaspoon of vanilla extract, and 1 tablespoon of cornstarch until smooth.
- Pour the honey mixture into the pre-baked pie crust. Reduce the oven temperature to 350°F (175°C) and bake the pie for 30-35 minutes, or until the filling is set and the crust is golden brown.
