Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 3-4 tablespoons ice water
- 4 ripe peaches, peeled and sliced
- 1/4 cup honey
- 1/2 cup sliced almonds
Instructions
- Preheat the oven to 375°F (190°C).
- In a food processor, combine 1 1/2 cups of flour, 1/4 cup of sugar, and 1/4 teaspoon of salt. Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs.
- Add the ice water, 1 tablespoon at a time, and pulse until the dough comes together.
- Transfer the dough to a floured surface and shape it into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.
- Roll out the dough on a floured surface to fit a 9-inch tart pan. Press the dough into the pan and trim any excess. Prick the bottom with a fork and line with parchment paper. Fill with pie weights or dried beans and bake for 15 minutes. Remove the weights and parchment paper, then bake for an additional 5 minutes until the crust is golden brown. Let it cool.
- Arrange the sliced peaches in the cooled tart shell, overlapping them slightly. Sprinkle the sliced almonds over the peaches.
- In a small saucepan, heat the honey over low heat until it becomes thin and runny. Drizzle the honey over the peaches and almonds.
- Bake the tart for 20-25 minutes, or until the peaches are tender and the crust is golden brown.
- Allow the tart to cool before serving. Enjoy!
