Instructions

  • Remove the Haagen-Dazs vanilla ice cream from the freezer and let it sit at room temperature for 10 minutes to soften slightly.
  • Line a baking sheet with parchment paper.
  • Using a sharp knife, cut the pint of ice cream into 8 equal bars.
  • Insert a popsicle stick into each ice cream bar and place them on the prepared baking sheet.
  • Place the baking sheet in the freezer and freeze the ice cream bars for at least 2 hours, or until they are firm.
  • In a microwave-safe bowl, combine 1 cup of semisweet chocolate chips and 2 tablespoons of coconut oil.
  • Microwave the chocolate mixture in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.
  • Remove the frozen ice cream bars from the freezer.
  • Working quickly, dip each ice cream bar into the melted chocolate, allowing any excess to drip off.
  • If desired, sprinkle the chocolate-coated ice cream bars with chopped nuts before the chocolate sets.
  • Place the chocolate-coated ice cream bars back on the parchment-lined baking sheet and return them to the freezer for at least 1 hour, or until the chocolate is set.
