  • 3 cloves garlic, minced

  • 4 salmon fillets (6 oz each)

Instructions

  • In a small bowl, whisk together 1/4 cup olive oil, minced garlic, lemon zest, and lemon juice. Season with salt and pepper.
  • Place the salmon fillets in a shallow dish and pour the marinade over them. Turn to coat evenly. Let marinate for 15 minutes.
  • Preheat the grill to medium-high heat. Brush the grates with oil to prevent sticking.
  • In a small saucepan, heat the honey over low heat until it becomes thin and easy to brush onto the salmon. Set aside.
  • While the grill is heating, prepare the mango salsa by combining diced mango, red onion, cilantro, jalapeno, and lime juice in a bowl. Season with a pinch of salt. Set aside.
