Ingredients
- 4 salmon fillets (6 oz each)
- 1/4 cup olive oil
- 3 cloves garlic, minced
- Zest of 1 lemon
- Juice of 1 lemon
- Salt and pepper to taste
- 1/4 cup honey
- 1 ripe mango, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeno, seeded and finely chopped
- 1 tablespoon lime juice
Instructions
- In a small bowl, whisk together 1/4 cup olive oil, minced garlic, lemon zest, and lemon juice. Season with salt and pepper.
- Place the salmon fillets in a shallow dish and pour the marinade over them. Turn to coat evenly. Let marinate for 15 minutes.
- Preheat the grill to medium-high heat. Brush the grates with oil to prevent sticking.
- In a small saucepan, heat the honey over low heat until it becomes thin and easy to brush onto the salmon. Set aside.
