Instructions

  • Preheat the grill to medium-high heat.
  • In a small bowl, mix together 2 tablespoons of olive oil, 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of paprika, and 1 teaspoon of garlic powder.
  • Brush the chicken breasts with the olive oil mixture and place them on the grill. Cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from the grill and let them rest for 5 minutes.
  • In a medium bowl, combine 1 diced ripe mango, 1/2 finely chopped red onion, 1 seeded and minced jalapeno pepper, 1/4 cup of chopped fresh cilantro, the juice of 1 lime, and 1 tablespoon of honey. Mix well to combine.
  • Serve the grilled chicken topped with the spicy mango salsa. Enjoy!
