Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 ripe mango, peeled and diced
- 1/2 red onion, finely chopped
- 1 jalapeno pepper, seeded and minced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 1 tablespoon honey
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix together 2 tablespoons of olive oil, 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of paprika, and 1 teaspoon of garlic powder.
- Brush the chicken breasts with the olive oil mixture and place them on the grill. Cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from the grill and let them rest for 5 minutes.
- In a medium bowl, combine 1 diced ripe mango, 1/2 finely chopped red onion, 1 seeded and minced jalapeno pepper, 1/4 cup of chopped fresh cilantro, the juice of 1 lime, and 1 tablespoon of honey. Mix well to combine.
- Serve the grilled chicken topped with the spicy mango salsa. Enjoy!
