Ingredients
- 4 slices of sourdough bread
- 4 tablespoons of unsalted butter, softened
- 4 ounces of Gruyere cheese, grated
- 4 ounces of sharp cheddar cheese, grated
- 1/2 cup of whole milk
- 1/2 cup of heavy cream
- 1 can (14.5 ounces) of diced tomatoes
- 1/2 teaspoon of sugar
- 1/4 teaspoon of dried basil
- Salt and pepper to taste
Instructions
- Preheat a non-stick skillet over medium heat.
- Spread 1 tablespoon of butter on one side of each slice of sourdough bread.
- Place 2 slices of bread, buttered side down, in the skillet.
- Divide the Gruyere and cheddar cheese evenly between the two slices of bread in the skillet.
- Top each with the remaining slices of bread, buttered side up.
- Cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
- In a medium saucepan, combine the diced tomatoes, sugar, dried basil, salt, and pepper.
- Simmer over medium heat for 10 minutes, stirring occasionally.
- In a separate saucepan, heat the milk and heavy cream over medium heat until steaming but not boiling.
- Using an immersion blender, blend the tomato mixture until smooth.
- Stir in the warm milk and cream mixture, and continue to heat for an additional 5 minutes.
- Serve the grilled cheese sandwiches with the tomato soup for dipping, and enjoy!
