  • 4 slices of sourdough bread
  • 4 tablespoons of unsalted butter, softened
  • 4 ounces of Gruyere cheese, grated
  • 4 ounces of sharp cheddar cheese, grated
  • 1/2 cup of whole milk
  • 1/2 cup of heavy cream
  • 1 can (14.5 ounces) of diced tomatoes
  • 1/2 teaspoon of sugar
  • 1/4 teaspoon of dried basil
  • Salt and pepper to taste

  • 1 can (14.5 ounces) of diced tomatoes
  • 1/2 teaspoon of sugar
  • 1/4 teaspoon of dried basil
  • Salt and pepper to taste

Instructions

  • Preheat a non-stick skillet over medium heat.
  • Spread 1 tablespoon of butter on one side of each slice of sourdough bread.
  • Place 2 slices of bread, buttered side down, in the skillet.
  • Divide the Gruyere and cheddar cheese evenly between the two slices of bread in the skillet.
  • Top each with the remaining slices of bread, buttered side up.
  • Cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
  • In a medium saucepan, combine the diced tomatoes, sugar, dried basil, salt, and pepper.
  • Simmer over medium heat for 10 minutes, stirring occasionally.
  • In a separate saucepan, heat the milk and heavy cream over medium heat until steaming but not boiling.
  • Using an immersion blender, blend the tomato mixture until smooth.
  • Stir in the warm milk and cream mixture, and continue to heat for an additional 5 minutes.
  • Serve the grilled cheese sandwiches with the tomato soup for dipping, and enjoy!
