Ingredients
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, softened
- 3/4 cup granulated sugar

- Food coloring (purple, blue, pink, and black)
- Edible silver or white glitter
Instructions
- In a medium bowl, whisk together 2 1/4 cups of all-purpose flour, 1/2 teaspoon of baking powder, and 1/4 teaspoon of salt. Set aside.
- In a large bowl, cream together 3/4 cup of softened unsalted butter and 3/4 cup of granulated sugar until light and fluffy.
- Beat in 1 large egg and 1 teaspoon of vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until the dough comes together.
- Divide the dough into 4 equal parts and tint each part with food coloring to create purple, blue, pink, and black dough.
- Roll out each colored dough into a thin layer and stack them on top of each other, then gently roll them together to create a marbled effect. Chill the dough in the refrigerator for 30 minutes.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Roll out the chilled dough to about 1/4 inch thickness and use cookie cutters to cut out shapes. Place the cookies on the prepared baking sheet.
- Bake for 8-10 minutes or until the edges are lightly golden. Allow the cookies to cool completely on a wire rack.
- To make the galaxy-themed icing, mix together powdered sugar and a small amount of water to create a thick icing. Divide the icing into separate bowls and tint each bowl with different colors of food coloring to create a galaxy effect.
- Using a piping bag or small spoon, drizzle the colored icing over the cooled cookies in a random pattern. Sprinkle with edible silver or white glitter to resemble stars.
