Ingredients
- 2 large eggplants, sliced into 1/2 inch rounds
- 2 cups of breadcrumbs
- 1 cup of grated Parmesan cheese
- 1 teaspoon of dried oregano
- 1 teaspoon of dried basil
- 1/2 teaspoon of garlic powder
- Salt and pepper to taste
- 3 eggs, beaten
- 2 cups of marinara sauce
- 1 pound of penne pasta
- 2 cups of shredded mozzarella cheese
- 1/4 cup of chopped fresh basil leaves
Instructions
- Preheat the oven to 375 degrees F. Grease a baking sheet.
- In a shallow dish, mix together 2 cups of breadcrumbs, 1 cup of grated Parmesan cheese, 1 teaspoon of dried oregano, 1 teaspoon of dried basil, 1/2 teaspoon of garlic powder, and salt and pepper to taste.
- Dip each eggplant slice into the beaten eggs, then coat with the breadcrumb mixture. Place the coated slices onto the prepared baking sheet.
- Bake the eggplant slices for 25 minutes, flipping them halfway through, until they are golden and crispy.
- While the eggplant is baking, cook the penne pasta according to the package instructions. Drain and set aside.
- In a 9x13 inch baking dish, spread 1 cup of marinara sauce on the bottom. Place a layer of the baked eggplant slices on top of the sauce, then sprinkle with 1/2 cup of shredded mozzarella cheese. Repeat the layers, finishing with a layer of marinara sauce and mozzarella cheese on top.
- Bake the assembled dish for 20 minutes, until the cheese is melted and bubbly.
- Garnish with chopped fresh basil leaves before serving.
