Ingredients
- 2 lbs pork belly, skin on
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup Greek yogurt
- 1/4 cup fresh mint leaves, chopped
- 1 clove garlic, minced
- 1 tbsp lemon juice
- 1/2 tsp cumin
- 1/2 tsp paprika
Instructions
- Preheat the oven to 425°F (220°C).
- Score the pork belly skin with a sharp knife, making shallow cuts in a crisscross pattern. Rub the skin with 1 tbsp of olive oil, 1 tsp of salt, and 1/2 tsp of black pepper.
