Instructions

  • Preheat the oven to 425°F (220°C).
  • Score the pork belly skin with a sharp knife, making shallow cuts in a crisscross pattern. Rub the skin with 1 tbsp of olive oil, 1 tsp of salt, and 1/2 tsp of black pepper.
  • Place the pork belly on a wire rack in a roasting pan, skin side up. Roast for 30 minutes to allow the skin to start crisping up.
  • Reduce the oven temperature to 325°F (160°C) and continue roasting for 1.5 hours, or until the pork belly is tender and the skin is crispy.
  • While the pork belly is roasting, prepare the mint yogurt sauce. In a bowl, mix together 1 cup of Greek yogurt, 1/4 cup of chopped fresh mint leaves, 1 minced clove of garlic, 1 tbsp of lemon juice, 1/2 tsp of cumin, 1/2 tsp of paprika, and a pinch of salt. Refrigerate until ready to serve.
