Instructions

  • Carefully pour the mixture into the popsicle molds, filling each one almost to the top. Place a popsicle stick into each mold, making sure it is centered. Freeze for at least 4 hours or until completely solid.
  • Once the popsicles are frozen, prepare the white chocolate coating. In a microwave-safe bowl, combine 1/4 cup of white chocolate chips and 1 tablespoon of coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is smooth and melted.
  • Remove the popsicles from the molds by running them under warm water for a few seconds. Dip each popsicle into the melted white chocolate, allowing any excess to drip off. Place the dipped popsicles onto a parchment-lined baking sheet and return them to the freezer for 10-15 minutes to allow the chocolate to set.
