Ingredients
- 1 block of firm tofu, pressed and cut into cubes
- 1/2 cup of coconut milk
- Zest and juice of 2 limes
- 2 tablespoons of soy sauce
- 1 tablespoon of maple syrup
- 1 tablespoon of cornstarch
- 2 tablespoons of coconut oil
- Salt and pepper to taste
- Fresh cilantro and lime wedges for garnish
Instructions
- In a bowl, whisk together 1/2 cup of coconut milk, the zest and juice of 2 limes, 2 tablespoons of soy sauce, and 1 tablespoon of maple syrup.
- Add 1 tablespoon of cornstarch to the mixture and whisk until smooth.
- In a large skillet, heat 2 tablespoons of coconut oil over medium-high heat.
- Add the cubed tofu to the skillet and cook until golden brown on all sides, about 5-7 minutes.
- Pour the coconut lime sauce over the tofu and stir to coat. Allow the sauce to thicken for 2-3 minutes.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro and lime wedges before serving.
- Serve the Coconut Lime Tofu over rice or noodles, and enjoy!
