Traditional Christmas Pudding

Ingredients
- 1 cup of raisins
- 1 cup of currants
- 1 cup of sultanas
- 1/2 cup of chopped mixed peel
- 1/2 cup of chopped almonds
- 1/2 cup of brandy
- 1/2 cup of dark rum
- 1/2 cup of grated suet
- 1 cup of fresh breadcrumbs
- 1 cup of all-purpose flour
- 1 teaspoon of ground cinnamon
- 1/2 teaspoon of ground nutmeg
- 1/2 teaspoon of ground allspice
- 1/4 teaspoon of ground cloves
- 1/2 teaspoon of salt
- 1 cup of dark brown sugar
- 1/2 cup of black treacle
- 4 eggs
- 1/2 cup of milk
Instructions
- In a large bowl, combine the raisins, currants, sultanas, mixed peel, and chopped almonds.
- Pour the brandy and rum over the fruit mixture, cover, and let it soak overnight.
- In a separate bowl, mix together the suet, breadcrumbs, flour, spices, salt, and brown sugar.
- Stir in the soaked fruit mixture and the black treacle.
- In a small bowl, beat the eggs and milk together, then add to the fruit and suet mixture.
- Grease a 2-pint pudding basin and spoon the mixture into it, pressing down firmly.
- Cover the basin with a double layer of parchment paper and a layer of foil, pleating it in the middle to allow for expansion.
- Place the pudding basin in a large pot and pour in enough boiling water to come halfway up the sides of the basin.
- Cover the pot with a lid and steam the pudding for 6 hours, adding more boiling water as needed to maintain the water level.
- Carefully remove the pudding from the pot and let it cool completely before removing the paper and foil.
- To store, re-cover the pudding with fresh parchment paper and foil, and store in a cool, dark place until ready to serve.
- To reheat, steam the pudding for 2 hours before serving. Serve with brandy butter or custard.
