  • Add the chopped semisweet chocolate to the hot cream and let it sit for 2 minutes to melt, then stir until smooth. Let the mixture cool to room temperature.
  • In a large bowl, whip the remaining 1/2 cup of heavy cream with 2 tablespoons of granulated sugar and 1 teaspoon of vanilla extract until stiff peaks form.
  • Gently fold the cooled chocolate mixture into the whipped cream until fully combined.
  • In a separate bowl, toss the fresh berries with 1/4 cup of powdered sugar until coated.
  • To assemble the parfaits, spoon a layer of chocolate mousse into the bottom of each serving glass, then add a layer of the sugared berries. Repeat the layers, finishing with a dollop of chocolate mousse on top.
  • Refrigerate the parfaits for at least 1 hour before serving to allow the mousse to set and the flavors to meld.
