  • 1/4 cup celery, finely chopped
  • 1/4 cup red bell pepper, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup vegan mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 slices whole grain bread
  • Lettuce leaves and tomato slices for serving

  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 slices whole grain bread
  • Lettuce leaves and tomato slices for serving

Instructions

  • In a large bowl, mash the chickpeas with a fork or potato masher until slightly chunky.
  • Add the red onion, celery, red bell pepper, and parsley to the bowl and mix well.
  • In a small bowl, whisk together the vegan mayonnaise, Dijon mustard, lemon juice, garlic powder, salt, and pepper.
  • Pour the dressing over the chickpea mixture and stir until well combined.
  • Toast the whole grain bread slices if desired.
  • Divide the chickpea salad evenly among 4 slices of bread.
  • Top with lettuce leaves and tomato slices, then cover with the remaining bread slices to make sandwiches.
