Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup red onion, finely chopped
- 1/4 cup celery, finely chopped
- 1/4 cup red bell pepper, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup vegan mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 8 slices whole grain bread
- Lettuce leaves and tomato slices for serving
Instructions
- In a large bowl, mash the chickpeas with a fork or potato masher until slightly chunky.
- Add the red onion, celery, red bell pepper, and parsley to the bowl and mix well.
- In a small bowl, whisk together the vegan mayonnaise, Dijon mustard, lemon juice, garlic powder, salt, and pepper.
- Pour the dressing over the chickpea mixture and stir until well combined.
- Toast the whole grain bread slices if desired.
- Divide the chickpea salad evenly among 4 slices of bread.
- Top with lettuce leaves and tomato slices, then cover with the remaining bread slices to make sandwiches.
