Chickpea Salad

Ingredients
- 2 cans of chickpeas, drained and rinsed
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine 2 cans of chickpeas, diced cucumber, diced red bell pepper, finely chopped red onion, and chopped fresh parsley.
- In a small bowl, whisk together 1/4 cup of olive oil, 2 tablespoons of lemon juice, 1 teaspoon of Dijon mustard, and minced garlic. Season with salt and pepper to taste.
- Pour the dressing over the chickpea mixture and toss to coat evenly.
- Refrigerate the chickpea salad for at least 30 minutes to allow the flavors to meld together.
- Serve chilled and enjoy!
