Ingredients
- 4 cups of pitted cherries
- 1 cup of granulated sugar
- 1 tablespoon of cornstarch
- 1 teaspoon of vanilla extract
- 1 cup of all-purpose flour
- 1/4 cup of brown sugar
- 1 teaspoon of baking powder
- 1/4 teaspoon of salt
- 1/2 cup of unsalted butter, cold and cut into small pieces
- 1/4 cup of boiling water
- 8 scoops of vanilla ice cream
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together 1 cup of granulated sugar, 1 tablespoon of cornstarch, and 1 teaspoon of vanilla extract. Add the pitted cherries and toss to coat. Transfer the cherry mixture to a 9x13 inch baking dish.
- In a separate bowl, combine 1 cup of all-purpose flour, 1/4 cup of brown sugar, 1 teaspoon of baking powder, and 1/4 teaspoon of salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs. Sprinkle the crumb mixture over the cherries in the baking dish.
- Pour 1/4 cup of boiling water over the topping. Bake in the preheated oven for 40-45 minutes, or until the topping is golden brown and the cherry filling is bubbling.
- Allow the cherry cobbler to cool for 10-15 minutes before serving. Serve each portion with a scoop of vanilla ice cream on top. Enjoy!
