Ingredients
- 4 cups of diced potatoes
- 1/2 cup of diced onion
- 1/2 cup of diced celery
- 4 cups of chicken broth
- 1/4 cup of butter
- 1/4 cup of all-purpose flour
- 2 cups of milk
- 2 cups of shredded cheddar cheese
- 1/2 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of paprika
- 1/4 cup of chopped green onions (optional, for garnish)
Instructions
- In a large pot, combine 4 cups of diced potatoes, 1/2 cup of diced onion, 1/2 cup of diced celery, and 4 cups of chicken broth. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the potatoes are tender.
- In a separate saucepan, melt 1/4 cup of butter over medium heat. Stir in 1/4 cup of all-purpose flour to make a roux. Cook and stir for 2 minutes.
- Gradually whisk in 2 cups of milk, stirring constantly until the mixture is thick and bubbly.
- Add the milk mixture to the potato mixture in the large pot. Stir in 2 cups of shredded cheddar cheese until melted.
- Season with 1/2 teaspoon of salt, 1/2 teaspoon of black pepper, 1/2 teaspoon of garlic powder, and 1/2 teaspoon of paprika. Cook for an additional 5 minutes, stirring occasionally.
- Serve hot, garnished with chopped green onions if desired. Enjoy!
