Instructions

  • Add the milk and butter to the pot with the potatoes. Mash the potatoes with a potato masher until smooth and creamy. Stir in the shredded cheddar cheese until melted. Season with salt and pepper to taste. Keep warm.
  • In a large skillet, heat the olive oil over medium heat. Add the thinly sliced onions and cook, stirring occasionally, for 10-15 minutes, or until the onions are soft and golden brown. Sprinkle the brown sugar over the onions and continue to cook for an additional 5 minutes, stirring occasionally, until the onions are caramelized.
