Instructions

  • In a large pot, heat 2 tbsp of olive oil over medium heat.
  • Add the diced chicken breast and cook until browned, about 5 minutes.
  • Add the chopped onion, sliced carrots, and chopped celery to the pot. Cook for another 5 minutes, stirring occasionally.
  • Pour in the chicken broth and water. Season with 1 tsp of salt, 1/2 tsp of black pepper, and 1/2 tsp of dried thyme. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Stir in the chopped fresh parsley and simmer for an additional 5 minutes.
  • Taste and adjust seasoning if necessary.
  • Serve hot and enjoy!
