  • Scrub the potatoes and pierce them with a fork. Place them directly on the oven rack and bake for 45-60 minutes, or until tender.
  • In the meantime, steam the broccoli florets until they are tender, about 5-7 minutes. Set aside.
  • Once the potatoes are done, remove them from the oven and let them cool for a few minutes.
  • Cut a slit lengthwise across the top of each potato and carefully scoop out the flesh into a bowl, leaving a thin shell. Mash the potato flesh with butter, sour cream, salt, and pepper.
  • Stir in the steamed broccoli, 3/4 cup of cheddar cheese, and half of the bacon bits into the mashed potato mixture.
  • Spoon the mixture back into the potato shells and sprinkle the remaining cheddar cheese and bacon bits on top.
  • Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  • Serve hot and enjoy!
