Broccoli and Cheddar Stuffed Baked Potato with Bacon Bits
Created by: Howcan Team
Ingredients
- 4 large baking potatoes
- 2 cups of broccoli florets
- 1 cup of shredded cheddar cheese
- 1/2 cup of bacon bits
- 1/4 cup of sour cream
- 2 tablespoons of butter
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Scrub the potatoes and pierce them with a fork. Place them directly on the oven rack and bake for 45-60 minutes, or until tender.
- In the meantime, steam the broccoli florets until they are tender, about 5-7 minutes. Set aside.
- Once the potatoes are done, remove them from the oven and let them cool for a few minutes.
- Cut a slit lengthwise across the top of each potato and carefully scoop out the flesh into a bowl, leaving a thin shell. Mash the potato flesh with butter, sour cream, salt, and pepper.
- Stir in the steamed broccoli, 3/4 cup of cheddar cheese, and half of the bacon bits into the mashed potato mixture.
- Spoon the mixture back into the potato shells and sprinkle the remaining cheddar cheese and bacon bits on top.
- Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Serve hot and enjoy!
