Instructions

  • Preheat the oven to 350 degrees F. Line a 12x17 inch baking sheet with parchment paper.
  • In a large bowl, beat the egg whites with an electric mixer until frothy. Add the cream of tartar and continue to beat until soft peaks form. Gradually add 1/2 cup of white sugar while continuing to beat until stiff peaks form.
  • Spread the meringue onto the prepared baking sheet, smoothing it out evenly. Bake for 15-20 minutes or until the meringue is set and lightly golden. Remove from the oven and let it cool.
  • While the meringue is cooling, prepare the custard filling. In a saucepan, combine the sweetened condensed milk, egg yolks, water, and salt. Cook over low heat, stirring constantly, until the mixture thickens. Remove from heat and stir in the vanilla extract. Let the custard cool slightly.
  • Once the meringue has cooled, sprinkle the surface with confectioners' sugar. Place a clean kitchen towel over the meringue and carefully invert it onto the towel. Gently peel off the parchment paper.
  • Spread the custard filling evenly over the meringue. Using the towel to help, carefully roll the meringue from the short end, creating a log. Place the roll seam-side down on a serving platter.
  • Chill the Brazo de Mercedes in the refrigerator for at least 1 hour before slicing and serving. Enjoy!
