Brazo de Mercedes
Created by: Howcan Team
Ingredients
- 10 large eggs, separated
- 1 cup white sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon cream of tartar
- 1/2 cup confectioners' sugar
- 1 can (14 ounces) sweetened condensed milk
- 1/2 cup water
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350 degrees F. Line a 12x17 inch baking sheet with parchment paper.
- In a large bowl, beat the egg whites with an electric mixer until frothy. Add the cream of tartar and continue to beat until soft peaks form. Gradually add 1/2 cup of white sugar while continuing to beat until stiff peaks form.
- Spread the meringue onto the prepared baking sheet, smoothing it out evenly. Bake for 15-20 minutes or until the meringue is set and lightly golden. Remove from the oven and let it cool.
- While the meringue is cooling, prepare the custard filling. In a saucepan, combine the sweetened condensed milk, egg yolks, water, and salt. Cook over low heat, stirring constantly, until the mixture thickens. Remove from heat and stir in the vanilla extract. Let the custard cool slightly.
- Once the meringue has cooled, sprinkle the surface with confectioners' sugar. Place a clean kitchen towel over the meringue and carefully invert it onto the towel. Gently peel off the parchment paper.
- Spread the custard filling evenly over the meringue. Using the towel to help, carefully roll the meringue from the short end, creating a log. Place the roll seam-side down on a serving platter.
- Chill the Brazo de Mercedes in the refrigerator for at least 1 hour before slicing and serving. Enjoy!
Brazo de Mercedes is a classic Filipino dessert that translates to "Mercedes' arm" in Spanish. This heavenly treat consists of a soft meringue roll filled with rich custard. The dish is believed to have originated during the Spanish colonial period in the Philippines, showcasing the influence of Spanish cuisine on Filipino cooking. The delicate meringue is made from egg whites and sugar, while the luscious custard filling is crafted from egg yolks, milk, and vanilla. This indulgent dessert is a staple in Filipino celebrations and can be found in traditional bakeries and restaurants across the Philippines. One renowned spot for this delectable treat is the iconic Aristocrat Restaurant in Manila, known for its exceptional Brazo de Mercedes. The key to a perfect Brazo de Mercedes lies in achieving a light and airy meringue and a velvety smooth custard filling. For a unique twist, some chefs incorporate flavors like calamansi or lemon zest into the custard for a refreshing citrusy note. Whether enjoyed at a family gathering or savored at a local eatery, Brazo de Mercedes continues to captivate dessert lovers with its irresistible combination of textures and flavors.
