Ingredients
- 12 oz (340g) semisweet chocolate, chopped
- 1/2 cup (120ml) heavy cream
- 2 tbsp (30g) unsalted butter
- 1 tsp vanilla extract
- 1/4 cup (60ml) caramel sauce
- 1/4 cup (30g) cocoa powder, for dusting
Instructions
- In a heatproof bowl, place 12 oz (340g) of chopped semisweet chocolate.
- In a small saucepan, heat 1/2 cup (120ml) of heavy cream and 2 tbsp (30g) of unsalted butter over medium heat until it just begins to simmer.
- Pour the hot cream mixture over the chopped chocolate and let it sit for 1 minute to soften the chocolate.
- Gently stir the mixture until the chocolate is completely melted and smooth. Stir in 1 tsp of vanilla extract.
- Cover the bowl with plastic wrap and refrigerate for 2 hours, or until the mixture is firm enough to scoop.
- Using a small cookie scoop or spoon, portion the chocolate mixture and roll it into 1-inch balls. Place the truffles on a parchment-lined baking sheet.
- Drizzle each truffle with 1/4 cup (60ml) of caramel sauce.
- Refrigerate the truffles for 15 minutes to set the caramel drizzle.
- Place 1/4 cup (30g) of cocoa powder in a shallow dish. Roll each truffle in the cocoa powder to coat evenly.
- Store the truffles in an airtight container in the refrigerator until ready to serve. Enjoy!
