  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

  • 4 metal or soaked wooden skewers

Instructions

  • In a small bowl, whisk together 1/4 cup olive oil, 2 tablespoons balsamic vinegar, 2 cloves minced garlic, 1 teaspoon dried oregano, 1 teaspoon dried thyme, and salt and pepper to taste.
  • Place the beef cubes in a resealable plastic bag and pour half of the marinade over the beef. Seal the bag and refrigerate for at least 30 minutes.
  • Preheat grill to medium-high heat.
  • Thread marinated beef, bell peppers, red onion, and mushrooms onto skewers, alternating the ingredients.
  • Brush the skewers with the remaining marinade.
  • Grill the skewers for 10-15 minutes, turning occasionally, until the beef is cooked to desired doneness and the vegetables are tender.
  • Remove from the grill and let rest for a few minutes before serving.
