Beef and Vegetable Skewers

Ingredients
- 1 lb beef sirloin, cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 8 oz mushrooms, whole
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 4 metal or soaked wooden skewers
Instructions
- In a small bowl, whisk together 1/4 cup olive oil, 2 tablespoons balsamic vinegar, 2 cloves minced garlic, 1 teaspoon dried oregano, 1 teaspoon dried thyme, and salt and pepper to taste.
- Place the beef cubes in a resealable plastic bag and pour half of the marinade over the beef. Seal the bag and refrigerate for at least 30 minutes.
- Preheat grill to medium-high heat.
- Thread marinated beef, bell peppers, red onion, and mushrooms onto skewers, alternating the ingredients.
- Brush the skewers with the remaining marinade.
- Grill the skewers for 10-15 minutes, turning occasionally, until the beef is cooked to desired doneness and the vegetables are tender.
- Remove from the grill and let rest for a few minutes before serving.
