  • 2 cans of young green jackfruit in brine, drained and rinsed
  • 1 cup of BBQ sauce
  • 1 tablespoon of olive oil
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of onion powder
  • 1/2 teaspoon of smoked paprika
  • 1/4 teaspoon of cayenne pepper
  • Salt and pepper to taste
  • 4 hamburger buns
  • 1 cup of coleslaw (optional)

Instructions

  • Using your hands or a fork, shred the jackfruit into small pieces, removing any seeds or tough parts.
  • In a large skillet, heat the olive oil over medium heat. Add the shredded jackfruit and sauté for 5 minutes.
  • Add the garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper to the skillet. Stir to combine and cook for an additional 2 minutes.
  • Pour the BBQ sauce over the jackfruit and stir to coat. Reduce the heat to low and simmer for 20 minutes, stirring occasionally.
  • While the jackfruit is simmering, lightly toast the hamburger buns in a toaster or on a skillet.
  • Once the jackfruit is tender and the sauce has thickened, remove from heat.
  • Assemble the sandwiches by placing a generous amount of the BBQ jackfruit mixture on the bottom half of each bun. Top with coleslaw if desired, and cover with the top half of the bun.
  • Serve the BBQ jackfruit sandwiches immediately and enjoy!
