Instructions

  • In a large pot, heat 2 tablespoons of olive oil over medium heat.
  • Add the diced onion and minced garlic, and cook until softened, about 3 minutes.
  • Add the ground beef to the pot, breaking it up with a spoon, and cook until browned, about 5 minutes.
  • Stir in the paprika, cumin, salt, and black pepper, and cook for another 2 minutes.
  • Add the barley and broth to the pot, and bring to a boil.
  • Reduce the heat to low, cover, and simmer for 25-30 minutes, or until the barley is tender and the liquid is absorbed.
  • Divide the cooked barley and burger mixture among 4 bowls.
  • Top each bowl with cherry tomatoes, cucumber, feta cheese, and fresh parsley.
  • Serve and enjoy!
