Barley and Burger Bowl

Ingredients
- 1 cup barley
- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups beef or vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat.
- Add the diced onion and minced garlic, and cook until softened, about 3 minutes.
- Add the ground beef to the pot, breaking it up with a spoon, and cook until browned, about 5 minutes.
- Stir in the paprika, cumin, salt, and black pepper, and cook for another 2 minutes.
- Add the barley and broth to the pot, and bring to a boil.
- Reduce the heat to low, cover, and simmer for 25-30 minutes, or until the barley is tender and the liquid is absorbed.
- Divide the cooked barley and burger mixture among 4 bowls.
- Top each bowl with cherry tomatoes, cucumber, feta cheese, and fresh parsley.
- Serve and enjoy!
