Instructions

  • In a medium saucepan, whisk together 3/4 cup granulated sugar, 1/3 cup flour, and 1/4 teaspoon salt.
  • Gradually whisk in 2 cups of whole milk until smooth.
  • Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
  • Boil for 1 minute, then remove from heat.
  • Gradually whisk about 1 cup of the hot milk mixture into the beaten egg yolks, then return the egg mixture to the saucepan.
  • Cook for an additional 2 minutes, stirring constantly.
  • Remove from heat and stir in 2 tablespoons of unsalted butter and 1 teaspoon of vanilla extract until smooth.
  • Layer half of the sliced bananas in the bottom of the pre-baked pie crust, then pour half of the custard mixture over the bananas.
  • Repeat with the remaining bananas and custard mixture.
  • Cover with plastic wrap, pressing it directly onto the surface of the custard to prevent a skin from forming.
  • Refrigerate for at least 4 hours or until set.
  • Before serving, whip 1 cup of heavy cream with 2 tablespoons of powdered sugar until stiff peaks form.
  • Spread the whipped cream over the chilled pie.
  • Garnish with additional banana slices if desired.
