Ingredients
- 1 9-inch pre-baked pie crust
- 3/4 cup granulated sugar
- 1/3 cup all-purpose flour
- 1/4 teaspoon salt
- 2 cups whole milk
- 3 large egg yolks, beaten
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 3 ripe bananas, sliced
- 1 cup heavy cream
- 2 tablespoons powdered sugar
Instructions
- In a medium saucepan, whisk together 3/4 cup granulated sugar, 1/3 cup flour, and 1/4 teaspoon salt.
- Gradually whisk in 2 cups of whole milk until smooth.
- Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
- Boil for 1 minute, then remove from heat.
- Gradually whisk about 1 cup of the hot milk mixture into the beaten egg yolks, then return the egg mixture to the saucepan.
- Cook for an additional 2 minutes, stirring constantly.
- Remove from heat and stir in 2 tablespoons of unsalted butter and 1 teaspoon of vanilla extract until smooth.
- Layer half of the sliced bananas in the bottom of the pre-baked pie crust, then pour half of the custard mixture over the bananas.
- Repeat with the remaining bananas and custard mixture.
- Cover with plastic wrap, pressing it directly onto the surface of the custard to prevent a skin from forming.
- Refrigerate for at least 4 hours or until set.
- Before serving, whip 1 cup of heavy cream with 2 tablespoons of powdered sugar until stiff peaks form.
- Spread the whipped cream over the chilled pie.
- Garnish with additional banana slices if desired.
