Ingredients
- 4 slices of bread
- 4 slices of bacon
- 1 ripe avocado, sliced
- 1/2 cup of shredded cheddar cheese
- 2 tablespoons of mayonnaise
- 1 teaspoon of chipotle peppers in adobo sauce, minced
- 1 tablespoon of butter
Instructions
- In a small bowl, mix together 2 tablespoons of mayonnaise and 1 teaspoon of minced chipotle peppers. Set aside.
- Cook the bacon in a skillet over medium heat until crispy. Remove from the skillet and drain on paper towels.
- Spread the chipotle mayo on one side of each slice of bread.
- Place 2 slices of bread, mayo side down, in the skillet. Top each slice with 2 slices of bacon, half of the avocado slices, and 1/4 cup of shredded cheddar cheese. Place the remaining bread slices on top, mayo side up.
- Spread 1/2 tablespoon of butter on the top of each sandwich.
- Cook the sandwiches in the skillet over medium heat for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
- Slice the sandwiches in half and serve hot. Enjoy!
