  • In a skillet, cook 3 slices of bacon over medium heat until crispy. Remove from the skillet and drain on paper towels. Crumble the bacon and set aside.
  • In a bowl, beat 3 large eggs until well combined. Stir in the crumbled bacon and 1/4 cup shredded cheddar cheese. Season with salt and pepper to taste.
  • In the same skillet, melt 1 tablespoon of butter over medium heat. Pour the egg mixture into the skillet and let it cook undisturbed for 2-3 minutes, or until the edges start to set.
  • Using a spatula, gently lift the edges of the omelette and tilt the skillet to allow the uncooked eggs to flow to the edges. Continue cooking for another 2-3 minutes, or until the omelette is mostly set but still slightly runny on top.
  • Fold the omelette in half using the spatula and cook for an additional 1-2 minutes, or until the cheese is melted and the eggs are cooked to your desired doneness.
