Instructions

  • Preheat the oven to 350 degrees F. Grease a 9x9 inch baking dish.
  • In a large bowl, toss the sliced apples with 1/4 cup of sugar, cinnamon, nutmeg, and lemon juice. Spread the apple mixture evenly in the prepared baking dish.
  • In a medium saucepan, heat the milk and cream over medium heat until it begins to simmer.
  • In a separate bowl, whisk together 1/2 cup of sugar, egg yolks, and cornstarch until smooth and pale in color.
  • Slowly pour the hot milk mixture into the egg yolk mixture, whisking constantly. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon, about 5-7 minutes.
  • Remove the custard from the heat and stir in the vanilla extract. Pour the custard over the apples in the baking dish.
  • Bake for 30-35 minutes, or until the custard is set and the apples are tender.
  • Allow to cool for 10 minutes before serving. Enjoy warm or chilled.
