Wood-Grilled Salmon with Mango Salsa

Ingredients
- 4 salmon fillets (6 oz each)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 mango, diced
- 1/2 red onion, finely chopped
- 1/2 red bell pepper, diced
- 1 jalapeno pepper, seeded and minced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 1 tablespoon honey
Instructions
- Preheat the grill to medium-high heat, around 400°F.
- Brush the salmon fillets with 1 tablespoon of olive oil and season with 1 teaspoon of salt and 1/2 teaspoon of black pepper.
- Place the salmon fillets on the grill and cook for 4-5 minutes on each side, or until the fish flakes easily with a fork. Remove from the grill and set aside.
- In a medium bowl, combine 1 diced mango, 1/2 finely chopped red onion, 1/2 diced red bell pepper, 1 seeded and minced jalapeno pepper, 1/4 cup chopped fresh cilantro, 2 tablespoons of lime juice, and 1 tablespoon of honey. Mix well to combine.
- Top each grilled salmon fillet with a generous spoonful of mango salsa.
- Serve the wood-grilled salmon with mango salsa immediately, and enjoy!
