The history of wood-grilled salmon topped with mango salsa dates back to the fusion of Caribbean and Pacific Northwest cuisines. This dish combines the smoky flavors of wood-grilled salmon with the tropical sweetness of mango salsa, creating a harmonious blend of flavors. Renowned chefs in the Pacific Northwest, such as Tom Douglas, have popularized this dish, infusing it with their own unique culinary twists. The best versions of this dish can be found in upscale seafood restaurants in Seattle and Portland, where the freshness of the salmon and the ripe sweetness of the mango are paramount. The key to perfecting this dish lies in sourcing high-quality, fresh salmon and ripe, juicy mangoes, as well as mastering the art of wood grilling to impart that irresistible smoky flavor. For a unique twist, some chefs also incorporate a hint of citrus or a touch of heat to elevate the mango salsa.
