Ingredients
- 4 cups of chicken or vegetable broth
- 1 stalk of lemongrass, cut into 2-inch pieces and smashed
- 3 kaffir lime leaves, torn into pieces
- 2 Thai bird's eye chilies, smashed
- 1 inch of galangal or ginger, sliced
- 8 ounces of shrimp, peeled and deveined
- 8 ounces of mushrooms, sliced
- 3 tablespoons of fish sauce
- 2 tablespoons of lime juice
- 1 tablespoon of sugar
- 1/2 cup of cherry tomatoes, halved
- 1/4 cup of cilantro leaves
- 2 green onions, sliced
Instructions
- In a pot, bring the chicken or vegetable broth to a boil.
- Add the lemongrass, kaffir lime leaves, Thai bird's eye chilies, and galangal or ginger to the pot.
- Simmer for 5 minutes to infuse the broth with the aromatics.
- Add the shrimp and mushrooms to the pot and cook until the shrimp turns pink and the mushrooms are tender, about 3-5 minutes.
- Stir in the fish sauce, lime juice, and sugar.
- Add the cherry tomatoes, cilantro leaves, and green onions to the pot.
- Remove the lemongrass, kaffir lime leaves, Thai bird's eye chilies, and galangal or ginger from the soup.
- Taste and adjust the seasoning with more fish sauce, lime juice, or sugar if needed.
- Serve hot and enjoy!
