  • Beat in 2 eggs, one at a time, then stir in 1 teaspoon of vanilla extract.
  • Gradually mix in the dry ingredients, alternating with 1/2 cup of milk, until just combined.
  • Divide the batter evenly into 6 small bowls. Add a few drops of each color of food coloring to each bowl, creating red, orange, yellow, green, blue, and purple batters.
  • Spoon a small amount of each colored batter into the cupcake liners, layering the colors to create a rainbow effect.
