Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 3 (8 ounce) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 eggs
- 1 cup crushed pineapple, drained
- 1/2 cup coconut cream
- 1/4 cup all-purpose flour
- 1/2 cup shredded coconut, toasted (optional)
Instructions
- Preheat the oven to 350 degrees F.
- In a medium bowl, mix together 1 1/2 cups graham cracker crumbs, 1/4 cup sugar, and 1/2 cup melted butter. Press into the bottom of a 9-inch springform pan.
- In a large bowl, beat 3 packages of softened cream cheese, 1 cup sugar, and 1 teaspoon vanilla extract until smooth. Beat in 3 eggs one at a time. Mix in 1 cup drained crushed pineapple, 1/2 cup coconut cream, and 1/4 cup flour. Pour over the crust.
- Bake in the preheated oven for 60 minutes, or until the center is set. Allow to cool, then refrigerate for at least 4 hours or overnight before serving.
- Optional: Sprinkle 1/2 cup of toasted shredded coconut over the top before serving.
