  • In a large bowl, beat 3 packages of softened cream cheese, 1 cup sugar, and 1 teaspoon vanilla extract until smooth. Beat in 3 eggs one at a time. Mix in 1 cup drained crushed pineapple, 1/2 cup coconut cream, and 1/4 cup flour. Pour over the crust.
  • Bake in the preheated oven for 60 minutes, or until the center is set. Allow to cool, then refrigerate for at least 4 hours or overnight before serving.
  • Optional: Sprinkle 1/2 cup of toasted shredded coconut over the top before serving.
