Peach Tart
Created by: Howcan Team
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1 egg yolk
- 2-3 tablespoons ice water
- 5-6 ripe peaches, peeled, pitted, and sliced
- 1/4 cup apricot preserves
- 1 tablespoon water
- 1 tablespoon powdered sugar (optional, for dusting)
Instructions
- Preheat the oven to 375°F (190°C).
- In a food processor, combine 1 1/2 cups of flour, 1/2 cup of sugar, and 1/4 teaspoon of salt. Add the cold butter pieces and pulse until the mixture resembles coarse crumbs.
- Add the egg yolk and 2 tablespoons of ice water. Pulse until the dough comes together, adding an additional tablespoon of ice water if needed.
- Transfer the dough to a floured surface and shape it into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.
- On a floured surface, roll out the dough into a 12-inch circle. Carefully transfer the dough to a 9-inch tart pan with a removable bottom. Press the dough into the pan and trim any excess from the edges.
- Arrange the peach slices in a concentric circle on top of the dough, slightly overlapping them.
- In a small saucepan, heat the apricot preserves and water over low heat until melted. Brush the mixture over the peaches.
- Bake the tart for 35-40 minutes, or until the crust is golden brown and the peaches are tender.
- Allow the tart to cool for 10 minutes before removing it from the pan. Dust with powdered sugar if desired.
- Slice and serve the peach tart warm or at room temperature. Enjoy!
Peach tart is a delectable dessert with a rich history dating back to medieval times. This classic French pastry features a buttery crust filled with ripe, juicy peaches and a sweet glaze. Renowned chefs like Julia Child and Jacques Pépin have popularized this timeless treat, and it has become a staple in patisseries across France. The best versions of this dish can be found in the picturesque regions of Provence and the Loire Valley, where the abundance of fresh, flavorful peaches enhances the tart's exquisite taste. To make the perfect peach tart, it's crucial to use perfectly ripe peaches and a flaky, golden crust. Alternatively, some chefs add a hint of almond or vanilla to elevate the flavor profile. Whether enjoyed at a quaint French bakery or homemade with love, peach tart is a delightful indulgence that continues to captivate dessert enthusiasts worldwide.
