Peach Tart

Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1 egg yolk
- 2-3 tablespoons ice water
- 5-6 ripe peaches, peeled, pitted, and sliced
- 1/4 cup apricot preserves
- 1 tablespoon water
- 1 tablespoon powdered sugar (optional, for dusting)
Instructions
- Preheat the oven to 375°F (190°C).
- In a food processor, combine 1 1/2 cups of flour, 1/2 cup of sugar, and 1/4 teaspoon of salt. Add the cold butter pieces and pulse until the mixture resembles coarse crumbs.
- Add the egg yolk and 2 tablespoons of ice water. Pulse until the dough comes together, adding an additional tablespoon of ice water if needed.
- Transfer the dough to a floured surface and shape it into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.
- On a floured surface, roll out the dough into a 12-inch circle. Carefully transfer the dough to a 9-inch tart pan with a removable bottom. Press the dough into the pan and trim any excess from the edges.
- Arrange the peach slices in a concentric circle on top of the dough, slightly overlapping them.
- In a small saucepan, heat the apricot preserves and water over low heat until melted. Brush the mixture over the peaches.
- Bake the tart for 35-40 minutes, or until the crust is golden brown and the peaches are tender.
- Allow the tart to cool for 10 minutes before removing it from the pan. Dust with powdered sugar if desired.
- Slice and serve the peach tart warm or at room temperature. Enjoy!
